Former Altrincham Market trader is in the pink as she opens Cheshire Cupcakes

A former Altrincham Market trader is to open a new cake and coffee shop just yards from her former stall.

Rosanagh Bailey is opening Cheshire Cupcakes on Market Street, opposite Altrincham Town Hall, this Friday.

The 28-year-old mum started baking in her mum's kitchen after graduating from university in 2016 and succeeded in building up a local customer base in Nantwich.

She opened the first Cheshire Cupcakes as a takeaway-only shop in Nantwich in 2020 and said she was "overwhelmed" as long queues formed outside the shop during lockdown.

Rosanagh then opened a stall in Altrincham Market in April 2022 and has similarly developed a loyal following for her range of cupcakes, brownies and blondies.

The new shop has created five local jobs and there are other vacancies still available.

"When we wanted to open a second shop Altrincham was my first choice," she said.

"This is a very different experience to Nantwich, where we were just a takeaway. Here you can come and sit in and we'll be introducing a sit-in menu soon. It'll be takeaway only for the first week and then we have lots of plans in place to develop from there."

She added: "We've had so much great support since being on the market and it will be so nice to see all our customers again when we open here.

"We bake everything by hand and fill all our cupcakes, so our jammy dodger cupcake has a jam core, vanilla butter cream and then more jam on top, so when you bite into it it literally tastes like a jammy dodger in cake form.

"We use Belgian chocolate in our brownies and local Cheshire producers for our flour, milk and butter."

As well as cake, Cheshire Cupcakes will sell hot chocolate, coffee and tea, with more hot and cold drinks to follow.

Rosanagh said she hopes she will be collaborating with other local businesses in Altrincham.

"I'm really excited. We took some time off after finishing at the market to plan this opening, and I also had a baby in the meantime! So it's taken a little longer than expected to open, but now is the right time."

Cheshire Cupcakes will be open from 10am until 5pm, Wednesday to Sunday.
